Muffin Tin Frittatas
They say breakfast is the most important meal of the day, but many of us find ourselves running out the door with a hand full of cereal and a large cup of coffee. It’s hardly satisfying, and it isn’t long until our stomachs are loudly growling for more.
In an attempt to lighten my morning load, I decided to make individual breakfast egg and veggie muffins, perfect to pop in the microwave or broiler to eat on the go!
This recipe is so simple, inexpensive, and versatile. Give it a try!
Eggs and/or egg whites
Salt and pepper to taste
Broccoli, garlic, onion, spinach, squash, peas, tomato, the options are endless!
Here is the best part! These Frittatas a baked in a muffin tin! Easy and perfectly portioned!
Spray the muffin tin with a gluten free cooking spray.
In a bowl, whip eggs and/or egg whites (I mixed 4 eggs and 8 egg whites for my 12 muffin tin)
Sautéed your vegetables. Use any of your favorites. I gathered an odd but tasty collection of broccoli, onion, yellow squash, and peas. Mmm!
And there you go! You now have perfectly portioned, ready made, and gluten free breakfast for your mornings on the go!
