After a long and hectic day of last minute Christmas shopping, the high hopes of creating a delicious home cooked meal had vanished. Between the bumper to bumper traffic and the mile long lines at the cash register, my brain went from Julia Child to a child cross armed and pouting. I had pizza on the brain, and while every red light thought otherwise, nothing was going to stop me.

Being gluten free, a quick stop for a pizza pie isn’t always a viable option. Pillsbury, however, has set out to change the way we do dinner, and dessert!

With three new quick and ready options, Pillsbury has integrated the gluten free community back into the refrigerated isle. Prepared cookie dough, pie dough, and pizza crust are now available in most grocery retailers.  I decided this was the perfect opportunity to give the new gluten free pizza crust a go!

 

INGREDIENTS 

1/4 cup Gluten free pizza sauce

3/4 cup Mozzarella cheese

3/4 cup Cheddar cheese

Gluten free turkey pepperoni

INSTRUCTIONS

Gluten Free Pizza

Pre-heat oven to 400 degrees. Follow the instructions on the Pillsbury gluten free pizza dough container. The dough is meant to be thin crust, so be sure to use an 11 inch pan as stated on the container.

The dough has an interesting texture, similar to a sugar cookies. Spreading is easy, but be sure to grease both hands and pan as it is very sticky.

Gluten Free Pizza Crust

Press crust into pan and bake for 12-14 minutes. The crust will look puffed and thick.

Add sauce and toppings. Mmm!

Pillsbury recommends baking for an additional 10-12 minutes. I prolonged the cook time an additional three minutes, placing the pan on the bottom rack of the oven for optimal cooked crust. Though not noted on the Pillsbury instructions, a pizza stone or a quick cook on the wire rack of the oven will create a crust with more crunch.
