Gluten Free Cornbread, Grandma Approved

Ok, the title is a little misleading. Grandma didn’t approve this cornbread, but if she wasn’t 400 miles away, I am sure she would enjoy it. Compare it to her own? Probably not. This southern woman knows how to make a cornbread, cob shaped cast-iron and all. But if you don’t have your own little Tennessean woman to cook you up some sweetbread, then this is a close second.

I decided to give Bob’s Red Mill’s Gluten Free Cornbread mix a try, as a perfect pairing to some warm chili.



1 package Bob’s Red Mill Gluten Free Cornbread Mix

1/3 cup oil or melted butter 

2 eggs

1-1/2 cups milk




Pre heat oven to 375 degrees.

Place mix into large bowl.


 Using an electric mixer, add in milk, eggs, and butter.


 Put batter into a greased 9×9 nonstick pan.

Bake for 25 minutes, or until a toothpick is inserted and comes out clean. This bread took an additional 8 minutes to bake completely.


 Holy Moly, you got yourself a cornbread beast!


 Slice, and enjoy with warm butter or honey…or both!

This cornbread is a great Gluten Free alternative! It has the texture and taste of traditional cornbread. Give it a try!
