Flourless Chocolate Crinkle Cookies

I woke up with a voice in my head. It was my sweet tooth, and it was demanding chocolate. Not in a polite way, but with a rebel yell. Uncontrollably and outrageously loud. I had to but it to rest, so I decided to roll up my sleeves and channel my inner Julia Child. Inspired by the incredible chocolate overload of the flourless chocolate cake recipe, I decided to make perfectly portioned chocolate flourless cookies. These cookies are soft and chewy, easy and delicious. You’re sure to win with this recipe!

INGREDIENTS

3 egg whites
4 ounces chocolate chips
2 cups powdered sugar
2/3 cup cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt

INSTRUCTIONS

 Preheat oven to 350 degrees.

Line a large cookie sheet in greased parchment paper, or slightly greased Silpat liner. You can sprinkle a layer of powdered sugar on the liner to create a barrier as well. These cookies are very sticky.

Using a stand mixer, or electric hand mixer on high speed, beat the egg whites until stiff peaks form. It is a little time consuming, but vital to the texture of the cookie.

On low speed, slowly add one cup powdered sugar to the egg whites.

In a separate bowl, whisk one cup powdered, cocoa powder, cornstarch, and salt.

Slowly add the dry mixture into the egg whites. The batter will be dense. 

Melt 4 ounces chocolate and fold into dough.

*Add in your favorites! Mini chocolate chips, crushed peppermint, or extracts will pair well with these gooey cookies!

Spoon 1 inch dough onto cookie sheet, 2 inches apart. Sprinkle with powdered sugar if desired.

Bake for 7-10 minutes. Watch the cookies carefully, DO NOT OVERCOOK! Remove cookies and let cool on baking sheet.

Flourless Chocolate Crinkle Cookie

Recipe makes 20-24 2 inch cookies.

Store in an air tight container.
